About Chef Anthony
Born in Thailand, world renowned Chef Anthony Bish has been creating unique fine dining experiences all over the globe for decades. From New York to Hong Kong to Elora, he's cooked for major celebrities, VIP clientele including the Royal Family of Thailand and more, and he also holds a 'World's Best 50' pizza award for his outstanding sourdough pies (from a concept in Bangkok he was owner in). Anthony has worked and collaborated numerous with Michelin starred Chefs, including Rafa Covarrubias (formerly of multi starred Hexagon restaurant) and been featured on global Chef competition programs Iron Chef, Master Chef and more.
Today, Chef Bish and his family reside in Canada's most beautiful village - Elora, Ontario. Since arriving in Spring 2025 he's opened two, highly acclaimed culinary concepts.

The Anthony's restaurant concept is based on Kat and Chef Bish's shared obsession with ultra rare, world's-best ingredients. Bish's menu here is elevated in nature, intentionally simple yet boldly flavourful, highly seasonal, and cooked in wood burning flame from the openview kitchen.
Reservations for the experience are only available via the Kat Florence Hotels concierge team for staying guests (private Chef tasting dinners with Bish are included in guests' stay on their first evening, courtesy of Kat).

Chef Bish's obsession with sourdough started early, as his grandmother lovingly prepared sourdough pancakes for him and his family using her secret recipe. Years later, Bish dominated the global pizza scene earning a 'World's 50 Best' award for his concept in Asia, and in 2025 brought his incredible pie-making-talents to Canada.
Serving only 100 phenomenal pizzas per day, Tony's Sourdough Pizzeria remains nationally recognized by foodies and media alike, continues to sell out daily, and is also a known favourite dining spot of many of the country's best known Chefs.
